Over the weekend I learned that my brother was offered a really great teaching job near Santa Barbara, California. While it will be about a four hour drive to go visit–I’ll take it! I am so excited that I will be able to go see him and his wonderful wife for weekend visits. The area they are moving to this August is absolutely beautiful, or so I have been told through my brother and his photos. It is a farming school, and because he has been getting into cheese making (he was the one that suggested I try the 30 minute mozzarella I made last week), they want to get a dairy cow and start to incorporate cheese making into the curriculum. They also sent my brother home from the interview with tons of freshly grown artichokes. Sounds like my kind of place, I can’t wait to visit! It really will be nice to have more of my family close by.
Speaking of family yesterday we went down to Russ’ grandparents house for a Memorial Day barbecue. Over the years I have come to be known in the family as the pie maker, which means I am busy in front of the oven on any given holiday. Yesterday was no different. There were 16 people attending, so I made three pies. I made apple (with the dome top), lemon meringue, and peach (with the lattice top). The lemon meringue surprised me and was the most popular pie. Little did they know that I totally burnt the meringue the first time around and had to scrape it off and start again (notice the extra dark crust!!).


I almost forgot to take a picture, but I ran out front with Russ and made him snap a picture of my outfit.

Over the weekend I bought a bunch of strawberries that were on sale at the local market, with strawberry pie in mind. Unfortunately I waited a bit too long to do anything about this so called pie, and many of the berries started to mold. Because of my lack of pie making motivation over the weekend, I no longer had enough berries to fill a pie. Thank goodness that I always keep frozen blueberries on hand, because I just threw those right in the mix, and made the most scrumptious pie.
I followed this recipe from AllRecipes.
- 2 (9 inch) unbaked pie crusts
- 1 1/4 cups white sugar
- 1/3 cup all-purpose flour
- 1/2 teaspoon ground cinnamon
- 4 cups fresh strawberries
- 2 tablespoons butter
- Preheat oven to 425 degrees F (220 degrees C). Place one crust in a nine inch pie pan.
- Mix together sugar, flour, and cinnamon. Mix lightly through the berries. Pour filling into pastry lined pan, and dot fruit with butter or margarine. Cover with top crust, and cut slits in the top. Seal and flute the edges.
- Bake for 35 to 45 minutes, or until the crust is slightly browned.

We are finally settled into our new apartment. Though I still have quite a bit of moving/unpacking to do, both Russ and I have quickly turned our new apartment into our home–even without everything in its place yet! We spent the entire past weekend moving, and while Russ has been working through the week I have continued moving. We both feel quite exhausted but happy, it really is so nice to have (most) our things surrounding us again.
We do have the luxury of not having to move everything in right away (my dad has lots of storage in his home), so now that I have all the essential things (clothes, kitchen supplies, bathroom things), I plan on doing the rest of the moving at a bit slower pace. Unfortunately through the flood and move we had to get rid of our couch–which just means I can find an amazing new one. Until then though we are sitting on our single chair and kitchen chairs in the living room.

This morning I started moving more of my closet over. This is probably only about ten percent of my hanging clothes, but it sure feels nice to start filling the closet up!

Another thing I am super excited about is access to an oven! When we moved into the apartment out back of my aunt’s house she promised to get it fixed within the month that we moved in, and guess what–it never happened! I have been spending lots of time in our new kitchen, doing a ton of baking. Today I was really craving a piece of lemon meringue pie, so here it is! I followed this recipe.
