Pardon my absence, life has gotten a bit in the way of blogging lately. Here are some of the things that have been occupying my time and mind:
-I was recently made organizer of the mama group we belong to, and though I am happy to step up and fill a role that needed to be filled, it has been quite literally kicking my butt. All of my free moments (and many not free moments!) over the past few weeks have been spent thinking or planning for the group.
-Making over the house. I have so many home projects under way, I honestly don’t know how I will finish any or all of them. Impulsively I decided to paint over our crappy laminate cabinets. This has proven to be a much larger task than I anticipated, and I am hoping that before I get back to that project I win the lottery and can pay someone to come in and do a full kitchen remodel.
-The swap meet. I have had a lot of lucky lately finding incredible things, for close to nothing! I found the turquoise lamp above for $5 two weeks ago (the shade is one I had). I also found that round hanging light above at a thrift store. I am in lamp heaven.
-Pumpkin enchiladas. I know I’m kind of jumping the gun here, but I had a serious craving for pumpkin yesterday. I sauteed an onion with some garlic until soft. I then mixed the onion and garlic in with a can of pumpkin puree, about 1/2 teaspoon cumin, salt, pepper, a dash of cayenne, and a dash of cinnamon. In a baking dish spread a few spoonfuls of enchilada sauce over the bottom. After rolling up a few tablespoons of the mix in a corn tortilla place in baking dish. Top with enchilada sauce and cheese. Bake (I did 350 for about 30 minutes). They turned out so delicious, but I am looking forward to seeing whole pumpkins in the store, so I can try this again with a more ‘chunky’ texture.
-A recent heat wave left us trapped indoors for weeks with the AC running at full speed. Somehow, the sunsets at the end of the day seemed to totally erase the feelings of cabin fever we have been feeling.
-In the Mood by Glen Miller. It is all I listen to. All. Day. Long. Lucy is so obsessed with that song, I must listen to it 30 times a day or more. I consider myself lucky, it’s an amazing song and after weeks of listening to it obsessively, I have not grown tired of it. She has also grown quite a liking for Louis Armstrong. She can pick his voice off the radio. This kid blows my mind!
It is hard to believe a month has passed since I last posted, I promise not to wait until October to post again. It feels good to be back, I hope all is well internet friends.
