Red Beans and Rice Recipe

It has been ages since I posted a recipe or anything about food, but I guess it has also been ages since I have felt at all creative when it comes to cooking. Now that we are in a new place and I have a larger kitchen than ever (yay!), I think that is all going to change. I am really excited to crack open the cookbooks and do some serious cooking and baking. Hopefully when baby is born I will still have this energy and excitement in my system to try cooking and baking some new and more creative meals than we have been eating these past few months.

This recipe is not a new one for us, but rather a staple in our house–especially when I am craving something savory and smoky in flavor. We almost always have all the ingredients on hand so I make these red beans and rice quite frequently. This dish will be perfect for the days when I don’t have the time or energy to slave away in the kitchen, it is the sort of thing you can just throw in a pot and forget about until dinner time. I have yet to make it in the crock pot but I am sure it would be perfect.

This dish is definitely not the prettiest, but don’t let my pictures deter you from trying this recipe. These beans are amazing and full of delicious smokey and spicy flavor, not to mention they make the house smell divine!

  • 1 pound red kidney beans
  • 1 onion, chopped
  • 2-3 stalks celery, chopped
  • 1 green bell pepper, chopped
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1 teaspoon dried parsley
  • 3-4 cloves garlic, minced
  • Cayenne pepper to taste
  • 1 beer
  • 1 teaspoon liquid smoke
  • 4-5 slices of bacon, chopped
  • Enough broth to cover beans at least 2”
  • Salt and Pepper to taste

Wash beans and add to a large stockpot with all other ingredients. Cover and simmer for about two hours on medium heat, or until beans are very soft. Add more water if they start to dry out too much. With a potato masher smash about half the beans in the pot. Serve over rice.

    my fiance is from new orleans and his sister taught me how to make red beans and rice. i cook mine in the crock pot and serve it with cornbread. definitely an easy and tasty dish.
